Hard to make a bad lasagna.
Bechamel is the business but for a lighter meal, especially say a midweek, try mixing greek yoghurt with an egg or two, some nutmeg, seasoning, and layer on top. Works really well for a moussaka as well.

Indian is without doubt my favourite cuisine. Ive got loads of books, including Ricks. Its such a cunt that i lost my sense of taste and smell. Most curries i make from scratch, i taste through memory. Weird.

I got his Mexican cook book for Christmas and the stuff in it looks amazing, need to get more specialised ingredients for most of the recipes but the stuff I have made was amazing :
