Waiting staff all trained to push the mezcal and tequila at extortionate prices as well. I said exactly the same as you when I was in - street food tapas type places are a goldmine if you get them right. They're in fashion, quick table turnaround and people will always order more food than they need, as well as the food being quick and easy to prepare. I really liked it tbf.
