Love a classic steak tartare but also had one in the Alps a few years back where they melted raclette over it at the table, quite a nice touch but wouldn't want it every time.
Was at Roka recently and they had wagyu sushi on the tasting menu, absolutely unreal
I'll basically order any raw beef that's on a menu The raw pork on toast you get in Germany is a step too far for me though
Totally raw, I dress mine to order in finely chopped cornichons, capers, shallots, truffle aioli, Tabasco, Worcestershire, salt and pepper and then finish with grated Parmesan

Cornichons, worcestershire, the classics. So fucking good. Love it with an egg yolk on top, a large side of frites, dijon and some crusty bread. That sounds great with the parmesan though.
I can imagine it tasting good but the texture would put me right off.
Had a piece of blue steak which is basically just seared and nothing else and it wasn't for me. It tasted good but it wasn't enjoyable as a steak that's actually been cooked. I can have it quite rare but blue wasn't it.
